Lemon Pepper Chicken and Asparagus Linguine

Ingredients
- 8 oz linguine pasta
- 2 boneless, skinless chicken breasts, cut into strips
- 2 tbsp lemon pepper seasoning
- 1/4 cup all-purpose flour
- 2 tbsp olive oil
- 1 bunch of asparagus, trimmed and cut into 2-inch pieces
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the linguine pasta according to package instructions. Drain and set aside.
- In a shallow dish, combine 2 tablespoons of lemon pepper seasoning with 1/4 cup of flour. Dredge the chicken strips in the mixture, shaking off any excess.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken strips and cook for 4-5 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the asparagus and minced garlic. Cook for 2-3 minutes, or until the asparagus is tender-crisp.
- Pour in 1/2 cup of chicken broth and 1/4 cup of heavy cream. Bring to a simmer and cook for 2-3 minutes, allowing the sauce to thicken slightly.
- Add the cooked linguine to the skillet and toss to coat with the sauce. Stir in 1/4 cup of grated Parmesan cheese and season with salt and pepper to taste.
- Return the cooked chicken to the skillet and gently toss to combine with the pasta and asparagus.
- Garnish with fresh parsley and serve hot. Enjoy!
