Ingredients
- 8 oz of linguine pasta
- 1 lb of large shrimp, peeled and deveined
- 1 bunch of asparagus, trimmed and cut into 2-inch pieces
- 3 cloves of garlic, minced
- 1/4 cup of fresh lemon juice
- Zest of 1 lemon
- 1/2 cup of grated Parmesan cheese
- 1/4 cup of chopped fresh parsley
- 3 tablespoons of olive oil
- Salt and pepper to taste
Instructions
- In a large pot, bring salted water to a boil and cook the linguine according to package instructions. Drain and set aside.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the shrimp and season with salt and pepper. Cook for 2-3 minutes on each side until pink and opaque. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil. Add the asparagus and garlic, and sauté for 3-4 minutes until the asparagus is tender-crisp.
- Return the shrimp to the skillet, then add the cooked linguine, lemon juice, and lemon zest. Toss everything together until well combined.
- Stir in the grated Parmesan cheese and chopped parsley. Cook for an additional 1-2 minutes until the cheese is melted and the pasta is heated through.
