  • 1 lb of large shrimp, peeled and deveined
  • 1 bunch of asparagus, trimmed and cut into 2-inch pieces
  • 3 cloves of garlic, minced
  • 1/4 cup of fresh lemon juice
  • Zest of 1 lemon
  • 1/2 cup of grated Parmesan cheese
  • 1/4 cup of chopped fresh parsley
  • 3 tablespoons of olive oil

Instructions

  • In the same skillet, add the remaining tablespoon of olive oil. Add the asparagus and garlic, and sauté for 3-4 minutes until the asparagus is tender-crisp.
  • Return the shrimp to the skillet, then add the cooked linguine, lemon juice, and lemon zest. Toss everything together until well combined.
  • Stir in the grated Parmesan cheese and chopped parsley. Cook for an additional 1-2 minutes until the cheese is melted and the pasta is heated through.
