  • 8 oz of salmon fillet, skinless
  • 8 oz of pasta
  • 1 bunch of asparagus, trimmed and cut into 2-inch pieces

  • 2 cloves of garlic, minced
  • 1 lemon, juiced and zested
  • 1/4 cup of fresh parsley, chopped
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  • Cook the pasta according to package instructions. Drain and set aside.
  • Season the salmon fillet with salt and pepper. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the salmon and cook for 4-5 minutes on each side, or until cooked through. Remove from the skillet and flake the salmon into bite-sized pieces.
  • In the same skillet, add the remaining 1 tablespoon of olive oil. Add the minced garlic and cook for 1-2 minutes until fragrant. Add the asparagus and cook for 3-4 minutes, or until tender-crisp.
  • Add the cooked pasta and flaked salmon to the skillet with the asparagus. Toss to combine.
  • Add the lemon juice, lemon zest, and chopped parsley to the skillet. Season with salt and pepper to taste. Toss everything together until well combined.
