Instructions

  • Preheat the oven to 400°F (200°C).
  • In a small bowl, whisk together the lemon juice, lemon zest, minced garlic, chopped rosemary, chopped thyme, and olive oil to create the marinade.
  • Place the chicken thighs in a large resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken, then refrigerate for at least 30 minutes.
  • While the chicken is marinating, rinse the quinoa under cold water and drain. In a medium saucepan, bring the chicken broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is fluffy and the liquid is absorbed.
  • Remove the chicken from the refrigerator and let it come to room temperature. Place the chicken thighs on a baking sheet lined with parchment paper, skin side up. Season with salt and pepper.
  • Roast the chicken in the preheated oven for 35-40 minutes, or until the skin is crispy and the internal temperature reaches 165°F (74°C).
  • While the chicken is roasting, fluff the cooked quinoa with a fork and season with salt and pepper to taste.
