Ingredients
- 8 oz of pasta
- 2 boneless, skinless chicken breasts
- 1/4 cup of olive oil
- 3 cloves of garlic, minced
- 1/4 cup of fresh lemon juice
- 1 tablespoon of lemon zest
- 1/4 cup of fresh parsley, chopped
- 1/4 cup of fresh basil, chopped
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- Season the chicken breasts with salt and pepper.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken breasts and cook for 6-7 minutes on each side, or until fully cooked. Remove from the skillet and let it rest for 5 minutes. Slice the chicken into strips.
- In the same skillet, heat the remaining olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
- Add the cooked pasta, lemon juice, lemon zest, parsley, and basil to the skillet. Toss to combine and heat through for 2-3 minutes.
- Add the sliced chicken to the skillet and toss to combine with the pasta. Season with additional salt and pepper if needed.
- Serve the lemon herb chicken pasta with a sprinkle of grated Parmesan cheese on top. Enjoy!
