  • 2 cups chicken or vegetable broth

  • 3 tablespoons fresh lemon juice
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley

Instructions

  • Rinse the quinoa under cold water and drain well.
  • In a medium saucepan, bring the broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and set aside.
  • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the shrimp and cook for 2-3 minutes per side until pink and opaque. Remove the shrimp from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of olive oil. Add the minced garlic and red pepper flakes, and sauté for 1 minute until fragrant.
  • Add the cooked quinoa to the skillet with the garlic and red pepper flakes. Stir in the lemon zest, lemon juice, salt, and pepper. Cook for 2-3 minutes to heat through and combine the flavors.
  • Return the cooked shrimp to the skillet and toss to coat with the quinoa mixture. Cook for an additional 1-2 minutes until the shrimp is heated through.
  • Sprinkle with chopped parsley before serving.
