  • 1 pound of large shrimp, peeled and deveined
  • 1/4 cup of olive oil
  • 4 cloves of garlic, minced
  • 1 teaspoon of red pepper flakes
  • 1/4 cup of fresh lemon juice
  • 1/4 cup of chopped fresh parsley
  • 2 cups of chicken broth
  • 1 1/2 cups of couscous
  • Salt and pepper to taste

Instructions

  • In a large skillet, heat 2 tablespoons of olive oil over medium heat.
  • Add the minced garlic and red pepper flakes, and sauté for 1-2 minutes until fragrant.
  • Add the shrimp to the skillet and cook for 2-3 minutes on each side until they turn pink and opaque. Season with salt and pepper. Remove the shrimp from the skillet and set aside.
  • In the same skillet, add the remaining 2 tablespoons of olive oil, lemon juice, and chicken broth. Bring to a simmer and cook for 5 minutes to reduce the sauce slightly.
  • Stir in the chopped parsley and return the cooked shrimp to the skillet, tossing to coat them in the lemon garlic sauce. Remove from heat.
  • In a separate pot, bring 2 cups of chicken broth to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
  • To serve, spoon the lemon garlic shrimp over the fluffy couscous and garnish with additional parsley if desired. Enjoy!
