Ingredients
- 1 pound large shrimp, peeled and deveined
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon lemon zest
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon chopped fresh parsley
- 4 metal or wooden skewers
Instructions
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.
- In a large bowl, combine the minced garlic, olive oil, lemon zest, lemon juice, salt, and black pepper.
- Add the peeled and deveined shrimp to the bowl and toss to coat evenly. Marinate for 10 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated shrimp onto the skewers, dividing them evenly among the 4 skewers.
- Grill the shrimp skewers for 2-3 minutes on each side, or until they are pink and opaque.
- Remove the skewers from the grill and sprinkle with chopped fresh parsley before serving.
