Created by: Howcan Team
Ingredients
- 1 pound of large shrimp, peeled and deveined
- 2 tablespoons of olive oil
- 4 cloves of garlic, minced
- 1 teaspoon of lemon zest
- 2 tablespoons of fresh lemon juice
- 1/2 teaspoon of red pepper flakes
- Salt and pepper to taste
- 1 pound of mixed vegetables (such as bell peppers, zucchini, and cherry tomatoes)
- 1 tablespoon of balsamic vinegar
- 1 teaspoon of dried oregano
- 1/2 teaspoon of garlic powder
- 2 tablespoons of grated Parmesan cheese
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the mixed vegetables with 1 tablespoon of olive oil, balsamic vinegar, dried oregano, garlic powder, salt, and pepper. Spread the vegetables in a single layer on a baking sheet.
- Roast the vegetables in the preheated oven for 20-25 minutes, or until they are tender and slightly caramelized.
- While the vegetables are roasting, prepare the shrimp. In a large bowl, combine the shrimp with the remaining 1 tablespoon of olive oil, minced garlic, lemon zest, lemon juice, red pepper flakes, salt, and pepper. Toss to coat the shrimp evenly.
- Heat a large skillet over medium-high heat. Add the seasoned shrimp to the skillet and cook for 2-3 minutes on each side, or until they are pink and opaque.
- Once the vegetables are done roasting, sprinkle them with grated Parmesan cheese and toss to combine.
- Serve the lemon garlic shrimp alongside the roasted vegetables and enjoy!
Lemon Garlic Shrimp is a classic dish that originated in the Mediterranean region, known for its vibrant flavors and fresh ingredients. The dish features succulent shrimp marinated in a zesty blend of lemon juice, minced garlic, and aromatic herbs, then sautéed to perfection. The addition of roasted vegetables, such as bell peppers, zucchini, and cherry tomatoes, adds a delightful burst of color and earthy sweetness to the meal. This delectable combination of seafood and vegetables has been a staple in coastal regions, where fresh seafood and locally grown produce are abundant. Renowned chefs and restaurants in Mediterranean coastal towns have perfected the art of preparing Lemon Garlic Shrimp with roasted vegetables, showcasing the region's culinary expertise. One of the key elements of this dish is the quality of the shrimp, as well as the balance of flavors in the marinade. The shrimp should be plump, tender, and brimming with natural sweetness, while the marinade should strike the perfect harmony between tangy citrus, pungent garlic, and fragrant herbs. For those seeking a famous alternative method for making this dish, some chefs recommend grilling the shrimp and vegetables to impart a smoky charred flavor, elevating the dish to new heights. Today, the best versions of Lemon Garlic Shrimp with a side of roasted vegetables can be found in authentic Mediterranean restaurants that prioritize fresh, high-quality ingredients and time-honored cooking techniques. Whether enjoyed by the seaside or in a bustling city, this dish continues to captivate diners with its vibrant flavors and wholesome appeal.
