  • 4 cloves of garlic, minced
  • 1/4 cup of fresh lemon juice
  • 1/2 teaspoon of lemon zest
  • 1/4 cup of chopped fresh parsley
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  • Cook the pasta according to the package instructions. Drain and set aside.
  • Season the salmon cubes with salt and pepper.
  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
  • Add the seasoned salmon cubes to the skillet and cook for 3-4 minutes, or until golden brown. Remove the salmon from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of olive oil and minced garlic. Cook for 1-2 minutes until fragrant.
  • Add the cooked pasta, lemon juice, and lemon zest to the skillet. Toss to combine and heat through for 2-3 minutes.
  • Gently fold in the cooked salmon cubes and chopped parsley. Cook for an additional 1-2 minutes to warm the salmon.
  • Season with additional salt and pepper to taste.
  • Serve the lemon garlic salmon pasta hot, garnished with grated Parmesan cheese.
