  • While the chicken is marinating, rinse the quinoa under cold water. In a medium saucepan, bring the chicken broth or water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15-20 minutes, or until the liquid is absorbed and the quinoa is tender. Fluff with a fork and stir in the chopped parsley. Keep warm.
  • Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the excess marinade. Grill the chicken for 6-7 minutes on each side, or until cooked through and no longer pink in the center.
  • Serve the grilled chicken with the cooked quinoa. Enjoy!
