Instructions

  • In a shallow dish, combine 1/4 cup of flour, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
  • Dredge the chicken breasts in the flour mixture, shaking off any excess.
  • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  • Add the chicken breasts to the skillet and cook for 5-6 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the minced garlic and sauté for 1-2 minutes, until fragrant.
  • Pour in 1/2 cup of chicken broth and 1/4 cup of fresh lemon juice, scraping up any browned bits from the bottom of the skillet.
  • Return the chicken to the skillet and simmer for 2-3 minutes, allowing the sauce to thicken slightly and the chicken to absorb the flavors.
  • While the chicken is simmering, cook 8 oz of angel hair pasta according to the package instructions. Drain and set aside.
  • To serve, place a portion of angel hair pasta on each plate, top with a lemon garlic chicken breast, and spoon the sauce over the chicken and pasta.
  • Garnish with chopped fresh parsley and grated Parmesan cheese.
