Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup balsamic vinaigrette
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 lemon, juiced and zested
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley, for garnish
Instructions
- In a small bowl, whisk together 1/2 cup of balsamic vinaigrette, 2 tablespoons of olive oil, minced garlic, lemon juice, lemon zest, dried oregano, salt, and black pepper.
- Place the chicken breasts in a resealable plastic bag or shallow dish, and pour the balsamic vinaigrette marinade over the chicken. Ensure the chicken is well coated. Seal the bag or cover the dish, and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the grill or a grill pan over medium-high heat. Remove the chicken from the marinade, allowing any excess to drip off. Discard the remaining marinade.
- Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the juices run clear. Alternatively, you can also bake the chicken in a preheated oven at 375°F (190°C) for 20-25 minutes.
- Once cooked, transfer the chicken to a serving platter and garnish with fresh parsley. Serve hot with your favorite side dishes and enjoy!
