Instructions

  • In a small bowl, whisk together the lemon juice, lemon zest, olive oil, minced garlic, chopped rosemary, salt, and black pepper.
  • Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours for maximum flavor.
  • Preheat the grill or a grill pan over medium-high heat. Remove the chicken from the marinade and discard the excess marinade.
  • Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the juices run clear. Alternatively, you can bake the chicken in a preheated 375°F (190°C) oven for 25-30 minutes.
  • Remove the chicken from the grill or oven and let it rest for 5 minutes before serving.
  • Garnish with additional fresh rosemary and lemon slices if desired. Serve and enjoy!
