Lebanese Mezze with Extra Hummus

Ingredients
- 2 cups of chickpeas
- 1/3 cup of tahini
- 1/4 cup of lemon juice
- 2 cloves of garlic, minced
- 1/2 teaspoon of cumin
- 1/4 cup of olive oil
- Salt to taste
- 1 cup of plain yogurt
- 1/4 cup of chopped fresh parsley
- 1/4 cup of chopped fresh mint
- 1/2 cup of diced tomatoes
- 1/2 cup of diced cucumbers
- 1/4 cup of diced red onions
- 1/4 cup of sliced radishes
- 1/4 cup of kalamata olives
- Pita bread or crackers for serving
Instructions
- In a food processor, combine 2 cups of chickpeas, 1/3 cup of tahini, 1/4 cup of lemon juice, 2 cloves of minced garlic, 1/2 teaspoon of cumin, and salt to taste. Blend until smooth, adding water as needed to achieve desired consistency.
- Transfer the hummus to a serving bowl and drizzle with 1/4 cup of olive oil. Set aside.
- In a separate bowl, mix 1 cup of plain yogurt with 1/4 cup of chopped fresh parsley and 1/4 cup of chopped fresh mint. Season with salt to taste.
- Arrange the hummus and yogurt mixture on a large platter, leaving space for the additional mezze items.
- Top the yogurt mixture with 1/2 cup of diced tomatoes, 1/2 cup of diced cucumbers, 1/4 cup of diced red onions, 1/4 cup of sliced radishes, and 1/4 cup of kalamata olives.
- Serve the Lebanese mezze with pita bread or crackers and enjoy!
