Ingredients
- 1 (5-6 pound) bone-in leg of lamb
- 6 cloves of garlic, minced
- 2 tablespoons of fresh rosemary, chopped
- 2 tablespoons of fresh thyme, chopped
- 1/4 cup of olive oil
- 2 teaspoons of salt
- 1 teaspoon of black pepper
- 1 cup of chicken broth
Instructions
- Preheat the oven to 350 degrees F.
- In a small bowl, mix together the minced garlic, chopped rosemary, chopped thyme, olive oil, salt, and black pepper.
- Place the leg of lamb in a roasting pan and rub the herb mixture all over the lamb, ensuring it is well coated.
- Pour the chicken broth into the bottom of the roasting pan.
- Cover the roasting pan with foil and roast in the preheated oven for 1 hour.
- Remove the foil and continue roasting for an additional 1 hour, or until the internal temperature reaches 145 degrees F for medium-rare or 160 degrees F for medium.
- Once done, remove the lamb from the oven and let it rest for 15 minutes before carving.
- Carve the lamb and serve with your favorite sides. Enjoy!
