Instructions

  • Preheat the oven to 350 degrees F.

  • Pour the chicken broth into the bottom of the roasting pan.
  • Cover the roasting pan with foil and roast in the preheated oven for 1 hour.
  • Remove the foil and continue roasting for an additional 1 hour, or until the internal temperature reaches 145 degrees F for medium-rare or 160 degrees F for medium.
  • Once done, remove the lamb from the oven and let it rest for 15 minutes before carving.
  • Carve the lamb and serve with your favorite sides. Enjoy!
