  • Score the skin of the lamb belly with a sharp knife, being careful not to cut into the meat.
  • Rub the lamb belly with 2 tbsp of olive oil, ensuring it is evenly coated.
  • In a small bowl, mix 2 tsp of salt, 1 tsp of black pepper, 1 tsp of paprika, 1/2 tsp of cumin, 1/2 tsp of garlic powder, and 1/2 tsp of onion powder.
  • Rub the spice mixture all over the lamb belly, including the skin side.
  • Place the lamb belly on a wire rack set over a baking sheet, skin side up.
  • Roast in the preheated oven for 2 hours, or until the skin is crispy and the meat is tender.
  • Remove from the oven and let it rest for 10 minutes before slicing.
