Korean BBQ Beef Bibimbap

Ingredients
- 1 lb of beef sirloin, thinly sliced
- 1/4 cup of soy sauce
- 2 tablespoons of brown sugar
- 2 cloves of garlic, minced
- 1 tablespoon of sesame oil
- 1 tablespoon of vegetable oil
- 4 cups of cooked white rice
- 1 cup of shredded carrots
- 1 cup of bean sprouts
- 1 cup of sliced cucumber
- 1 cup of sliced mushrooms
- 4 eggs
- Salt and pepper to taste
- Sesame seeds and green onions for garnish
Instructions
- In a bowl, mix 1/4 cup of soy sauce, 2 tablespoons of brown sugar, minced garlic, and sesame oil. Add the thinly sliced beef and marinate for at least 30 minutes.
- Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the marinated beef and cook for 3-4 minutes until browned. Set aside.
- In the same skillet, add a little more oil if needed and sauté the shredded carrots, bean sprouts, sliced cucumber, and mushrooms separately until tender. Season with salt and pepper.
- In a separate non-stick pan, fry the eggs sunny-side up or to your desired doneness.
- To assemble the bibimbap, divide the cooked rice among 4 bowls. Arrange the cooked beef and sautéed vegetables on top of the rice. Place a fried egg on each bowl.
- Garnish with sesame seeds and sliced green onions.
- Serve immediately and mix everything together before eating.
