Instructions

  • In a large bowl, combine 1 lb of ground beef or lamb, 1 small finely chopped onion, 2 minced cloves of garlic, 1/4 cup of chopped fresh parsley, 1/4 cup of breadcrumbs, 1 egg, 1 tsp of ground cumin, 1 tsp of ground coriander, 1/2 tsp of paprika, 1/4 tsp of cinnamon, and salt and pepper to taste.
  • Mix the ingredients until well combined, then cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  • Preheat the grill or barbecue to medium-high heat.
  • Divide the meat mixture into equal portions and shape each portion into a long, cylindrical kebab around a wooden skewer.
  • Place the kofta kebabs on the grill and cook for about 12-15 minutes, turning occasionally, until they are browned and cooked through.
