  • 1 cup of cooked, shredded chicken breast

  • 1/2 cup of sugar-free marinara sauce
  • 1 cup of cooked, shredded chicken breast
  • 1/2 cup of shredded mozzarella cheese (for topping)
  • Fresh basil leaves (for garnish)

Instructions

  • Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • In a microwave-safe bowl, microwave the riced cauliflower for 5-6 minutes, or until tender. Allow to cool slightly.
  • In a large bowl, combine the cooked cauliflower, 1/2 cup of mozzarella cheese, Parmesan cheese, oregano, garlic powder, salt, pepper, and egg. Mix until well combined.
  • Transfer the cauliflower mixture to the prepared baking sheet and shape into a 10-inch round crust. Bake for 10-12 minutes, or until golden brown and set.
  • Spread the marinara sauce over the baked cauliflower crust, then top with the shredded chicken and remaining 1/2 cup of mozzarella cheese.
  • Return the pizza to the oven and bake for an additional 8-10 minutes, or until the cheese is melted and bubbly.
