Ingredients
- 1 head of cauliflower, grated
- 2 tablespoons of sesame oil
- 2 cloves of garlic, minced
- 1 small onion, diced
- 1 cup of mixed vegetables (peas, carrots, bell peppers)
- 2 eggs, beaten
- 3 tablespoons of soy sauce
- 1 teaspoon of ginger, grated
- Salt and pepper to taste
- 2 green onions, chopped (for garnish)
Instructions
- In a large skillet, heat 1 tablespoon of sesame oil over medium heat.
- Add the minced garlic and diced onion, and sauté until fragrant.
- Stir in the mixed vegetables and cook until they are tender-crisp.
- Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked through, then mix them with the vegetables.
- In a separate skillet, heat the remaining 1 tablespoon of sesame oil over medium heat.
- Add the grated cauliflower and cook for 5-7 minutes, stirring occasionally, until it is tender.
- Stir in the cooked vegetables and eggs, then add the soy sauce and grated ginger. Mix well to combine.
- Season with salt and pepper to taste, and cook for an additional 2-3 minutes to heat through.
- Garnish with chopped green onions before serving.
