  • 1 cup of green beans, chopped
  • 1 cup of diced tomatoes
  • 1 cup of tomato paste
  • 2 cups of vegetable broth
  • 1 teaspoon of paprika
  • 1 teaspoon of curry powder
  • 1 teaspoon of thyme
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 scotch bonnet pepper (optional, for heat)
  • 2 cups of water

Instructions

  • Rinse the rice under cold water until the water runs clear, then drain and set aside.
  • In a large pot, heat the vegetable oil over medium heat. Add the chopped onions, garlic, and ginger, and sauté until the onions are soft and translucent.
  • Add the diced bell pepper, carrots, and green beans to the pot, and cook for 5 minutes, stirring occasionally.
  • Stir in the diced tomatoes and tomato paste, and cook for another 5 minutes.
  • Add the vegetable broth, paprika, curry powder, thyme, salt, black pepper, and scotch bonnet pepper (if using) to the pot, and bring to a simmer.
  • Once the mixture is simmering, add the rinsed rice and 2 cups of water, then stir to combine all the ingredients.
  • Cover the pot with a lid and reduce the heat to low. Let the rice simmer for 20-25 minutes, or until the rice is tender and the liquid has been absorbed.
  • Once the rice is cooked, remove the pot from the heat and let it sit, covered, for 5 minutes to steam.
