Vegetable Jollof Rice

Ingredients
- 2 cups of long-grain parboiled rice
- 1/4 cup of vegetable oil
- 1 large onion, finely chopped
- 3 cloves of garlic, minced
- 1 teaspoon of ginger, grated
- 1 bell pepper, diced
- 1 cup of diced carrots
- 1 cup of green beans, chopped
- 1 cup of diced tomatoes
- 1 cup of tomato paste
- 2 cups of vegetable broth
- 1 teaspoon of paprika
- 1 teaspoon of curry powder
- 1 teaspoon of thyme
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 scotch bonnet pepper (optional, for heat)
- 2 cups of water
Instructions
- Rinse the rice under cold water until the water runs clear, then drain and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onions, garlic, and ginger, and sauté until the onions are soft and translucent.
- Add the diced bell pepper, carrots, and green beans to the pot, and cook for 5 minutes, stirring occasionally.
- Stir in the diced tomatoes and tomato paste, and cook for another 5 minutes.
- Add the vegetable broth, paprika, curry powder, thyme, salt, black pepper, and scotch bonnet pepper (if using) to the pot, and bring to a simmer.
- Once the mixture is simmering, add the rinsed rice and 2 cups of water, then stir to combine all the ingredients.
- Cover the pot with a lid and reduce the heat to low. Let the rice simmer for 20-25 minutes, or until the rice is tender and the liquid has been absorbed.
- Once the rice is cooked, remove the pot from the heat and let it sit, covered, for 5 minutes to steam.
