  • 14 oz of jjolmyeon noodles
  • 1/2 cup of gochujang (Korean red chili paste)

  • 2 tablespoons of sesame oil
  • 1 tablespoon of minced garlic
  • 1 tablespoon of grated ginger
  • 1/2 cup of thinly sliced cucumber
  • 1/2 cup of julienned carrots
  • 1/2 cup of julienned red cabbage
  • 1/4 cup of chopped green onions
  • 1/4 cup of roasted sesame seeds
  • 1 tablespoon of vegetable oil

Instructions

  • Cook the jjolmyeon noodles according to the package instructions. Drain and rinse with cold water. Set aside.
  • In a small bowl, mix together 1/2 cup of gochujang, 1/4 cup of soy sauce, 3 tablespoons of rice vinegar, 2 tablespoons of sugar, 2 tablespoons of sesame oil, 1 tablespoon of minced garlic, and 1 tablespoon of grated ginger to make the spicy sauce.
  • Heat 1 tablespoon of vegetable oil in a pan over medium heat. Add the julienned carrots and red cabbage, and stir-fry for 2-3 minutes until slightly softened. Remove from heat and let it cool.
  • In a large mixing bowl, combine the cooked noodles, the spicy sauce, the stir-fried vegetables, 1/2 cup of thinly sliced cucumber, 1/4 cup of chopped green onions, and 1/4 cup of roasted sesame seeds. Toss everything together until well combined.
