Jamaican Doubles

Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup water
- 2 cups cooked chickpeas
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 1/2 teaspoon cayenne pepper
- 1/2 cup water
- Salt to taste
- Oil for frying
- Tamarind chutney, mango chutney, or hot pepper sauce for topping
Instructions
- In a large bowl, combine 2 cups of flour, 1 teaspoon of baking powder, and 1/2 teaspoon of salt.
- Gradually add 1 cup of water and knead the dough until smooth. Cover and let it rest for 15 minutes.
- In a separate bowl, mix the cooked chickpeas, chopped onion, minced garlic, curry powder, ground cumin, ground turmeric, cayenne pepper, and 1/2 cup of water. Cook over medium heat for 10-15 minutes, stirring occasionally, until the mixture thickens. Season with salt to taste.
- Divide the dough into 8 equal portions and roll each portion into a ball. Flatten each ball into a 4-inch round.
- Heat oil in a large skillet over medium heat. Fry the dough rounds until golden brown on both sides, about 2-3 minutes per side. Drain on paper towels.
- To assemble the doubles, place a spoonful of the curried chickpea mixture on one half of a fried dough round. Fold the other half over to form a sandwich.
- Top with tamarind chutney, mango chutney, or hot pepper sauce as desired.
- Serve hot and enjoy!
