Instructions

  • In a bowl, toss the shrimp with 1 tablespoon of Jamaican curry powder and a pinch of salt. Set aside.
  • In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion, garlic, and bell pepper. Cook until the vegetables are soft, about 5 minutes.
  • Add the remaining 1 tablespoon of Jamaican curry powder and stir to coat the vegetables.
  • Add the seasoned shrimp to the skillet and cook for 2-3 minutes, until they start to turn pink.
  • Pour in the coconut milk and add the chopped tomato. Simmer for 5-7 minutes, until the shrimp are fully cooked and the sauce has thickened slightly.
  • Season with salt and pepper to taste.
