Ingredients
- 1 pound of shrimp, peeled and deveined
- 2 tablespoons of Jamaican curry powder
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 bell pepper, chopped
- 1 tomato, chopped
- 1 cup of coconut milk
- 2 tablespoons of vegetable oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a bowl, toss the shrimp with 1 tablespoon of Jamaican curry powder and a pinch of salt. Set aside.
- In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion, garlic, and bell pepper. Cook until the vegetables are soft, about 5 minutes.
- Add the remaining 1 tablespoon of Jamaican curry powder and stir to coat the vegetables.
- Add the seasoned shrimp to the skillet and cook for 2-3 minutes, until they start to turn pink.
- Pour in the coconut milk and add the chopped tomato. Simmer for 5-7 minutes, until the shrimp are fully cooked and the sauce has thickened slightly.
- Season with salt and pepper to taste.
