Jalapeno Popper Stuffed Chicken with Spicy Chipotle Cream Sauce
Created by: Howcan Team
Ingredients
- 4 boneless, skinless chicken breasts
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 4 jalapeno peppers, seeded and diced
- 1 cup breadcrumbs
- 1/2 cup flour
- 2 eggs, beaten
- 1/4 cup vegetable oil
- 1/2 cup sour cream
- 2 tbsp adobo sauce (from canned chipotle peppers)
- 1 tsp lime juice
- 1/2 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, and diced jalapeno peppers.
- Cut a pocket into each chicken breast, being careful not to cut all the way through. Stuff each chicken breast with the cream cheese mixture.
- In three separate shallow dishes, place the flour, beaten eggs, and breadcrumbs.
- Dip each stuffed chicken breast first in the flour, then in the beaten eggs, and finally coat with breadcrumbs, pressing gently to adhere.
- In a large skillet, heat the vegetable oil over medium-high heat. Brown the stuffed chicken breasts on all sides, about 2-3 minutes per side.
- Transfer the browned chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- While the chicken is baking, prepare the spicy chipotle cream sauce. In a small bowl, mix together the sour cream, adobo sauce, lime juice, garlic powder, salt, and pepper.
- Once the chicken is done, serve it with the spicy chipotle cream sauce drizzled on top. Enjoy!
