  • Cut a pocket into each chicken breast, being careful not to cut all the way through. Stuff each chicken breast with the cream cheese mixture.
  • In three separate shallow dishes, place the flour, beaten eggs, and breadcrumbs.
  • Dip each stuffed chicken breast first in the flour, then in the beaten eggs, and finally coat with breadcrumbs, pressing gently to adhere.
  • In a large skillet, heat the vegetable oil over medium-high heat. Brown the stuffed chicken breasts on all sides, about 2-3 minutes per side.
  • Transfer the browned chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
