Instructions

  • In a large mixing bowl, combine 1 cup of yellow cornmeal, 1/2 cup of all-purpose flour, 1 teaspoon of baking powder, and 1/2 teaspoon of salt.
  • Stir in 1/2 cup of buttermilk, 1/4 cup of finely chopped jalapeno peppers, 1/4 cup of finely chopped onion, and 1 beaten egg until well combined.
  • In a deep pot or deep fryer, heat 2 inches of vegetable oil to 365°F (185°C).
  • Drop batter by rounded tablespoonfuls into the hot oil. Fry in batches for 2-3 minutes or until golden brown, turning occasionally.
  • Remove hush puppies with a slotted spoon and drain on paper towels.
  • Serve hot and enjoy!
