  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned and cooked through, about 8-10 minutes. Remove the sausage from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of olive oil. Add the diced onion and sliced mushrooms, and cook until softened, about 5 minutes. Add the minced garlic and dried oregano, and cook for an additional 1-2 minutes.
  • Pour the chicken broth into the skillet and bring to a boil. Gradually whisk in the polenta, stirring constantly to prevent lumps. Reduce the heat to low and simmer, stirring occasionally, until the polenta is thick and creamy, about 15-20 minutes.
  • Stir the cooked Italian sausage back into the skillet with the polenta. Season with salt and pepper to taste. Sprinkle the grated Parmesan cheese over the top and let it melt into the mixture.
