Ingredients
- 8 slices of beef or veal, thinly sliced
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- 1/4 cup olive oil
- 1 onion, finely chopped
- 2 cups tomato sauce
- 1/2 cup beef broth
- 1/4 cup red wine
Instructions
- In a bowl, combine 1/2 cup breadcrumbs, 1/4 cup grated Parmesan cheese, 2 cloves minced garlic, 1/4 cup chopped parsley, and salt and pepper to taste.
- Lay the beef or veal slices flat and evenly divide the breadcrumb mixture among them, spreading it over each slice.
- Roll up the slices and secure with toothpicks.
- In a large skillet, heat 1/4 cup olive oil over medium heat. Add the rolled meat and cook until browned on all sides, about 5 minutes.
- Remove the meat from the skillet and set aside.
- In the same skillet, add 1 finely chopped onion and cook until softened, about 5 minutes.
- Stir in 2 cups of tomato sauce, 1/2 cup beef broth, and 1/4 cup red wine. Bring to a simmer.
- Return the meat to the skillet, cover, and simmer for 20 minutes, or until the meat is cooked through and the sauce has thickened.
