Indonesian Lemongrass Tofu

Ingredients
- 14 oz firm tofu, drained and cut into cubes
- 2 stalks lemongrass, white part only, finely chopped
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 1 red chili, finely chopped
- 1 tbsp soy sauce
- 1 tbsp sweet soy sauce (kecap manis)
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp vegetable oil
- 1/4 cup water
- 1 tbsp lime juice
- 2 tbsp chopped fresh cilantro for garnish
Instructions
- In a bowl, mix together the soy sauce, sweet soy sauce, ground coriander, ground turmeric, salt, and black pepper.
- Add the tofu cubes to the bowl and gently toss to coat the tofu with the marinade. Let it sit for 10 minutes.
- Heat the vegetable oil in a large pan over medium heat. Add the lemongrass, garlic, onion, and red chili. Saute for 2-3 minutes until fragrant.
- Add the marinated tofu to the pan and cook for 5-7 minutes, stirring occasionally, until the tofu is golden brown and crispy on the outside.
- Pour in the water and lime juice, then stir to combine. Let it simmer for 2-3 minutes until the sauce thickens slightly.
- Transfer the lemongrass tofu to a serving dish, garnish with chopped cilantro, and serve hot with steamed rice or noodles.
