Ingredients
- 8 eggs
- 8 ounces of chorizo
- 1/2 onion, diced
- 1/2 bell pepper, diced
- 2 tomatoes, diced
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 cup of chopped cilantro
- 1 tablespoon of vegetable oil
Instructions
- In a large skillet, heat 1 tablespoon of vegetable oil over medium heat.
- Add 8 ounces of chorizo to the skillet and cook, breaking it up with a spoon, until it is fully cooked, about 5 minutes.
- Add 1/2 diced onion and 1/2 diced bell pepper to the skillet and cook until they are softened, about 3 minutes.
- Add 2 diced tomatoes to the skillet and cook for an additional 2 minutes.
- In a bowl, beat 8 eggs with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
- Pour the beaten eggs into the skillet with the chorizo and vegetables. Cook, stirring occasionally, until the eggs are set, about 5 minutes.
- Sprinkle 1/4 cup of chopped cilantro over the eggs and chorizo, and serve hot.
