Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1/4 cup honey
- 2 limes, juiced
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh cilantro
- 1/4 cup diced red onion
- 4 cups mixed salad greens
Instructions
- In a small bowl, whisk together 1/4 cup honey, the juice of 2 limes, 2 tablespoons of olive oil, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper to make the marinade.
- Place the peeled and deveined shrimp in a resealable plastic bag and pour half of the marinade over the shrimp. Seal the bag and refrigerate for 15 minutes.
- Preheat a grill or grill pan over medium-high heat. Thread the marinated shrimp onto skewers and grill for 2-3 minutes per side, or until they are pink and opaque. Remove from the grill and set aside.
- In a large bowl, combine the diced avocados, 1/4 cup chopped cilantro, 1/4 cup diced red onion, and the remaining marinade. Gently toss to coat the avocado.
- Divide the mixed salad greens among 4 plates. Top each plate with the marinated avocado mixture and grilled shrimp skewers.
- Serve immediately and enjoy!
