  • 1/4 cup of soy sauce
  • 2 tablespoons of honey
  • 1 tablespoon of rice vinegar
  • 1 tablespoon of sesame oil
  • 1 tablespoon of minced ginger
  • 2 cloves of garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup of broccoli florets
  • 2 green onions, chopped
  • Cooked rice or noodles, for serving

Instructions

  • In a small bowl, whisk together 1/4 cup of soy sauce, 2 tablespoons of honey, 1 tablespoon of rice vinegar, and set aside.
  • In a large ziplock bag, add 2 tablespoons of cornstarch and the cubed tofu. Seal the bag and shake until the tofu is coated with the cornstarch.
  • In a large non-stick skillet, heat 1 tablespoon of sesame oil over medium-high heat. Add the tofu and cook until golden and crispy, about 5-7 minutes. Remove the tofu from the skillet and set aside.
  • In the same skillet, add the minced ginger and garlic, and cook for 1 minute. Add the sliced bell peppers and broccoli, and stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  • Return the crispy tofu to the skillet, and pour the soy sauce-honey mixture over the tofu and vegetables. Stir to coat everything evenly and cook for an additional 2-3 minutes until the sauce thickens and coats the tofu and vegetables.
  • Remove from heat and sprinkle with chopped green onions. Serve the honey glazed tofu stir-fry over cooked rice or noodles. Enjoy!
