Instructions

  • Preheat the oven to 375°F (190°C).
  • In a small bowl, mix together 1/4 cup of honey, 2 tablespoons of soy sauce, 2 cloves of minced garlic, 1 teaspoon of paprika, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Place the pork chops in a Dutch oven and brush the honey glaze over the chops, reserving some for later. Cover the Dutch oven with a lid and bake for 30 minutes.
  • While the pork chops are cooking, toss the cubed sweet potatoes with 2 tablespoons of olive oil, 1 teaspoon of dried thyme, 1/2 teaspoon of garlic powder, and salt and pepper to taste. Spread the sweet potatoes in a single layer on a baking sheet.
  • After the pork chops have cooked for 30 minutes, remove the lid and brush the remaining honey glaze over the chops. Return to the oven, uncovered, and bake for an additional 15-20 minutes, or until the pork chops are caramelized and cooked through, and the sweet potatoes are tender and crispy.
  • Serve the honey glazed pork chops with the roasted sweet potatoes and enjoy!
