Instructions

  • Knead the dough on a floured surface until smooth, then cover and let it rest for 30 minutes.
  • Roll out the dough on a floured surface to about 1/8 inch thickness. Use a round cutter to cut out circles of dough.
  • Place a spoonful of mashed potatoes and a sprinkle of chopped chives in the center of each dough circle. Season with salt and pepper to taste.
  • Fold the dough over the filling to create a half-moon shape, then press the edges to seal.
  • Bring a large pot of salted water to a boil. Cook the pierogi in batches for about 3-5 minutes, or until they float to the surface. Remove with a slotted spoon and drain.
