Instructions

  • In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add 1 pound of ground turkey and cook until browned, breaking it up into small pieces with a spatula.
  • Add 1/2 cup shredded cabbage, 1/2 cup shredded carrots, 1/4 cup chopped green onions, 1 tablespoon soy sauce, 1 teaspoon minced garlic, and 1 teaspoon grated ginger to the skillet. Cook for 5-7 minutes until the vegetables are tender. Remove from heat and let it cool.
  • In a small bowl, mix 2 tablespoons of cornstarch with 3 tablespoons of water to create a slurry. This will be used to seal the egg rolls.
  • Place an egg roll wrapper on a clean surface with one corner pointing towards you. Spoon about 2-3 tablespoons of the turkey and vegetable mixture onto the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides, and roll tightly. Use the cornstarch slurry to seal the edge of the wrapper.
  • In a large skillet, heat vegetable oil over medium-high heat. Carefully place the egg rolls into the hot oil and fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
  • Serve the homemade egg rolls with a side of low-sodium soy sauce or sweet chili sauce for dipping. Enjoy!
