Instructions

  • In a large mixing bowl, combine 2 lbs of ground pork, 4 cloves of minced garlic, 2 tbsp of smoked paprika, 1 tbsp of chili powder, 1 tbsp of cayenne pepper, 1 tbsp of ground cumin, 1 tsp of ground coriander, 1 tsp of dried oregano, and 1/2 tsp of ground cloves. Mix well to ensure the spices are evenly distributed.
  • Add 1/4 cup of apple cider vinegar to the pork mixture and continue mixing until fully incorporated.
  • Season the mixture with salt and black pepper to taste, and mix again to ensure the seasoning is evenly distributed.
  • Heat a large skillet over medium-high heat. Once hot, add the seasoned pork mixture to the skillet, breaking it up with a spoon or spatula.
  • Cook the chorizo for 15-20 minutes, stirring occasionally, until the pork is fully cooked and slightly crispy.
  • Once cooked, remove the chorizo from the heat and let it cool for a few minutes before using or storing in an airtight container in the refrigerator.
