  • 2 tbsp apple cider vinegar

Instructions

  • In a large mixing bowl, combine 2 lbs of ground pork, 4 cloves of minced garlic, 2 tbsp of chili powder, 1 tbsp of paprika, 1 tsp of cumin, 1 tsp of oregano, 1/2 tsp of salt, 1/2 tsp of black pepper, and 1/4 tsp of cayenne pepper.
  • Add 2 tbsp of apple cider vinegar to the mixture and mix well until all the ingredients are evenly distributed.
  • Cover the bowl with plastic wrap and let the chorizo mixture marinate in the refrigerator for at least 2 hours, or overnight for best flavor.
  • After marinating, heat a large skillet over medium-high heat and add the chorizo mixture, breaking it up with a spoon as it cooks.
  • Cook the chorizo for about 10-12 minutes, stirring occasionally, until it is browned and cooked through.
  • Once cooked, remove the chorizo from the skillet and place it on a plate lined with paper towels to drain any excess grease.
