Ingredients
- 4 large potatoes, diced into 1/2 inch cubes
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Place the diced potatoes in a large pot and cover with cold water. Bring to a boil and cook for 5 minutes. Drain and pat dry with paper towels.
- In a large skillet, heat the olive oil over medium-high heat. Add the parboiled potatoes in a single layer and cook for 5-7 minutes, stirring occasionally, until they start to brown and crisp up.
- Sprinkle the paprika, garlic powder, salt, and black pepper over the potatoes. Stir to coat evenly and continue cooking for another 5-7 minutes, or until the potatoes are golden and crispy.
