Ingredients
- 2 large russet potatoes, peeled and grated
- 1 small onion, grated
- 2 eggs, beaten
- 3 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup vegetable oil for frying
- 1 cup applesauce
Instructions
- Place the grated potatoes and onion in a clean kitchen towel and squeeze out as much liquid as possible.
- In a large bowl, combine the grated potatoes, onion, beaten eggs, flour, salt, and black pepper. Mix well.
- Heat the vegetable oil in a large skillet over medium-high heat.
- Scoop up about 1/4 cup of the potato mixture and carefully place it in the hot oil, flattening it with a spatula to form a pancake. Repeat with the remaining potato mixture, cooking in batches if necessary.
- Fry the latkes for about 3-4 minutes on each side, or until they are golden brown and crispy. Remove from the skillet and place on a paper towel-lined plate to drain any excess oil.
- Serve the latkes hot with a side of applesauce.
