  • 1 cup of diced ham

  • 1/4 cup of honey mustard
  • 1 egg, beaten (for egg wash)

  • Add the cold, diced butter to the flour mixture and use a pastry cutter or fork to cut the butter into the flour until the mixture resembles coarse crumbs.
  • Slowly add the cold water to the flour and butter mixture, mixing until the dough comes together. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • On a lightly floured surface, roll out the chilled dough to 1/8 inch thickness. Use a round cutter or a small plate to cut out circles of dough, approximately 5 inches in diameter.
  • In a small bowl, mix together the diced ham, shredded cheddar cheese, and honey mustard.
  • Place a spoonful of the ham and cheese mixture in the center of each dough circle. Fold the dough over the filling to create a half-moon shape, then use a fork to crimp the edges and seal the empanadas.
  • Place the sealed empanadas on the prepared baking sheet. Brush the tops with the beaten egg wash.
  • Bake for 20-25 minutes, or until the empanadas are golden brown and crispy.
