  • 1/2 cup chopped green onions
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped fresh cilantro
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 egg, beaten
  • 1 tablespoon water
  • 1 cup diced tomatoes
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 jalapeno pepper, seeded and minced
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon lime juice
  • 1/2 teaspoon salt

Instructions

  • In a large bowl, combine 2 cups of flour and 1/2 teaspoon of salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  • Gradually add the cold water, tossing with a fork until a dough forms. Shape the dough into a ball, wrap in plastic wrap, and refrigerate for 30 minutes.
  • In a separate bowl, mix together the diced ham, shredded mozzarella cheese, chopped green onions, chopped red bell pepper, chopped cilantro, ground cumin, paprika, cayenne pepper, black pepper, and 1/2 teaspoon of salt.
  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • On a lightly floured surface, roll out the chilled dough to 1/8 inch thickness. Using a round cutter or a small plate, cut out circles of dough.
