  • Place the watermelon slices on the grill and cook for 2-3 minutes on each side, until grill marks appear.
  • Remove the watermelon from the grill and let it cool for a few minutes.
  • Cut the grilled watermelon into bite-sized cubes and place them in a large bowl.
  • In a small bowl, whisk together the remaining 2 tablespoons of olive oil and balsamic vinegar. Drizzle the dressing over the grilled watermelon and toss to coat.
