Grilled Shrimp Salad

Ingredients
- 1 pound of large shrimp, peeled and deveined
- 2 tablespoons of olive oil
- 1 teaspoon of paprika
- 1/2 teaspoon of garlic powder
- Salt and pepper to taste
- 6 cups of mixed salad greens
- 1 cup of cherry tomatoes, halved
- 1/2 cup of sliced cucumber
- 1/4 cup of sliced red onion
- 1/4 cup of crumbled feta cheese
- 1/4 cup of Kalamata olives
- 1/4 cup of chopped fresh parsley
- 1/4 cup of balsamic vinaigrette
Instructions
- Preheat grill to medium-high heat.
- In a bowl, toss the shrimp with 1 tablespoon of olive oil, paprika, garlic powder, salt, and pepper.
- Thread the shrimp onto skewers and grill for 2-3 minutes per side, until pink and opaque. Remove from the grill and set aside.
- In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, Kalamata olives, and parsley.
- In a small bowl, whisk together the remaining 1 tablespoon of olive oil and balsamic vinaigrette. Drizzle over the salad and toss to combine.
- Divide the salad onto plates and top with the grilled shrimp skewers.
- Serve immediately and enjoy!
