  • 1 pound of large shrimp, peeled and deveined
  • 2 tablespoons of olive oil
  • 1 teaspoon of paprika
  • 1/2 teaspoon of garlic powder
  • Salt and pepper to taste
  • 6 cups of mixed salad greens
  • 1 cup of cherry tomatoes, halved
  • 1/2 cup of sliced cucumber
  • 1/4 cup of sliced red onion
  • 1/4 cup of crumbled feta cheese
  • 1/4 cup of Kalamata olives
  • 1/4 cup of chopped fresh parsley
  • 1/4 cup of balsamic vinaigrette

  • 1/4 cup of sliced red onion
  • 1/4 cup of crumbled feta cheese
  • 1/4 cup of Kalamata olives
  • 1/4 cup of chopped fresh parsley
  • 1/4 cup of balsamic vinaigrette

Instructions

  • Preheat grill to medium-high heat.
  • In a bowl, toss the shrimp with 1 tablespoon of olive oil, paprika, garlic powder, salt, and pepper.
  • Thread the shrimp onto skewers and grill for 2-3 minutes per side, until pink and opaque. Remove from the grill and set aside.
  • In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, Kalamata olives, and parsley.
  • In a small bowl, whisk together the remaining 1 tablespoon of olive oil and balsamic vinaigrette. Drizzle over the salad and toss to combine.
  • Divide the salad onto plates and top with the grilled shrimp skewers.
  • Serve immediately and enjoy!
