Ingredients
- 4 salmon fillets (6 oz each)
- 1 cup quinoa
- 2 cups water
- 1/4 cup soy sauce
- 1/4 cup orange juice
- 2 tablespoons honey
- 1 tablespoon grated ginger
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Sesame seeds and green onions for garnish
Instructions
- Rinse the quinoa under cold water and drain well. In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and set aside.
- In a small bowl, whisk together the soy sauce, orange juice, honey, grated ginger, and minced garlic to make the citrus soy glaze. Set aside.
- Preheat the grill to medium-high heat. Brush the salmon fillets with olive oil and season with salt and pepper.
- Place the salmon fillets on the grill and cook for 4-5 minutes per side, or until the fish is opaque and flakes easily with a fork.
