Created by: Howcan Team

Ingredients

  • 4 salmon fillets (6 oz each)
  • 1 cup quinoa
  • 2 cups water
  • 1/4 cup soy sauce
  • 1/4 cup orange juice
  • 2 tablespoons honey
  • 1 tablespoon grated ginger
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Sesame seeds and green onions for garnish

Instructions

  • Rinse the quinoa under cold water and drain well. In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and set aside.
  • In a small bowl, whisk together the soy sauce, orange juice, honey, grated ginger, and minced garlic to make the citrus soy glaze. Set aside.
  • Preheat the grill to medium-high heat. Brush the salmon fillets with olive oil and season with salt and pepper.
  • Place the salmon fillets on the grill and cook for 4-5 minutes per side, or until the fish is opaque and flakes easily with a fork.
  • While the salmon is grilling, heat the citrus soy glaze in a small saucepan over medium heat, stirring occasionally, until it thickens slightly.
  • To serve, spoon the cooked quinoa onto plates, top with grilled salmon fillets, and drizzle with the citrus soy glaze. Garnish with sesame seeds and sliced green onions. Enjoy!
