Ingredients
- 4 salmon fillets (6 oz each)
- 2 tablespoons olive oil

- 1/4 cup chopped fresh mint
- 1/2 cup cherry tomatoes, halved
- 1/4 cup diced cucumber
- 1/4 cup diced red onion
- 2 tablespoons lemon juice
- 1 tablespoon red wine vinegar
- 1/4 cup crumbled feta cheese
Instructions
- Preheat the grill to medium-high heat.
- Brush the salmon fillets with 1 tablespoon of olive oil and season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
- Grill the salmon for 4-5 minutes per side, or until it reaches your desired level of doneness. Remove from the grill and set aside.
- In a medium saucepan, bring the vegetable broth to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.

- In a small bowl, whisk together the remaining 1 tablespoon of olive oil, lemon juice, red wine vinegar, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Pour over the couscous salad and toss to combine.
- Divide the couscous salad among 4 plates and top each with a grilled salmon fillet. Sprinkle with crumbled feta cheese and serve immediately.
