Ingredients
- 4 salmon fillets (6 oz each)
- 1/4 cup olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 hearts of romaine lettuce, chopped
- 1 cup croutons
- 1/2 cup grated Parmesan cheese
- 1/2 cup Caesar dressing
Instructions
- Preheat grill to medium-high heat.
- Brush salmon fillets with 2 tablespoons of olive oil and season with salt and pepper.
- Grill salmon for 4-5 minutes on each side, or until desired doneness. Remove from grill and let rest for 5 minutes.
- In a large bowl, toss romaine lettuce with remaining olive oil, croutons, and Parmesan cheese.
- Divide the salad mixture onto 4 plates.
- Top each salad with a grilled salmon fillet.
- Drizzle Caesar dressing over the top and serve immediately.
