  • 2 cups water
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons red wine vinegar
  • 1/4 cup olive oil
  • Salt and pepper to taste

  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons red wine vinegar
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  • In a small bowl, whisk together 1/4 cup olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.
  • Rinse the quinoa under cold water. In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and let it cool.
  • Preheat the grill to medium-high heat. Remove the salmon from the marinade and discard the excess marinade. Grill the salmon for 4-5 minutes per side, or until it flakes easily with a fork.
  • In a large bowl, combine the cooked quinoa, diced cucumber, diced bell pepper, chopped red onion, and chopped parsley. In a small bowl, whisk together the red wine vinegar, 1/4 cup olive oil, salt, and pepper. Pour the dressing over the quinoa salad and toss to combine. Gently fold in the crumbled feta cheese.
  • Serve the grilled salmon alongside the quinoa salad. Enjoy!
