Instructions

  • Rinse the quinoa under cold water and drain well.
  • In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Fluff with a fork and set aside.
  • Preheat the grill to medium-high heat.
  • In a small bowl, mix together the olive oil, salt, black pepper, paprika, garlic powder, and onion powder to create a marinade.
  • Brush the Mahi-Mahi fillets with the marinade on both sides.
  • Grill the fillets for 4-5 minutes on each side, or until the fish is opaque and flakes easily with a fork.
  • In a large bowl, combine the cooked quinoa with the lemon juice and chopped parsley. Mix well.
  • Serve the grilled Mahi-Mahi fillets on a bed of quinoa and garnish with additional parsley and lemon wedges if desired.
