Ingredients
- 1 pound large shrimp, peeled and deveined
- 1/4 cup coconut milk
- 2 tablespoons fresh lime juice
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 tablespoons chopped fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- In a large bowl, whisk together 1/4 cup coconut milk, 2 tablespoons lime juice, 2 cloves minced garlic, 1 teaspoon cumin, 1/2 teaspoon paprika, 1/4 teaspoon cayenne pepper, and salt and pepper to taste.
- Add the peeled and deveined shrimp to the bowl and toss to coat. Marinate for 10-15 minutes.
- Preheat the grill to medium-high heat. Thread the shrimp onto skewers, if using wooden skewers, make sure to soak them in water for 30 minutes before grilling.
- Grill the shrimp for 2-3 minutes per side, or until they are pink and opaque.
- Remove the shrimp from the grill and place on a serving platter. Sprinkle with chopped cilantro and serve with lime wedges.
