Instructions

  • In a large bowl, whisk together 1/4 cup coconut milk, 2 tablespoons lime juice, 2 cloves minced garlic, 1 teaspoon cumin, 1/2 teaspoon paprika, 1/4 teaspoon cayenne pepper, and salt and pepper to taste.
  • Add the peeled and deveined shrimp to the bowl and toss to coat. Marinate for 10-15 minutes.
  • Preheat the grill to medium-high heat. Thread the shrimp onto skewers, if using wooden skewers, make sure to soak them in water for 30 minutes before grilling.
  • Grill the shrimp for 2-3 minutes per side, or until they are pink and opaque.
